Cheesy garlic crumpet tear ‘n’ share
I love the texture of a crumpet, and this easy tear ‘n’ share is a perfect alternative when you are this close to ordering a pizza on a Tuesday night. Hopefully this cheesy, garlicky number will satisfy any greasy pizza cravings and save you money at the same time. I’ve suggested this serves 3-4, but it will do just as well for two hungry people.
SERVES 3-4
6 garlic cloves, peeled, crushed 100g light butter A pinch of sea salt Handful of freshly chopped parsley 8 crumpets 100g grated mozzarella cheese (preferably reduced-fat)
1 In a bowl, combine the garlic, butter, salt and parsley.
2 Spread all of the crumpets with the garlic butter. Top half of the crumpets with a little mozzarella, then sandwich together with the remaining crumpets. Cut the crumpets in half and scatter in an ovenproof dish; there is no art to it so organise in whatever way you like.
3 Top with the remaining mozzarella.
4 Air-fry at 180°C for 8-9 minutes, then tear and share the life out of it!
French toast bites with a melted speculoos drizzle
You can use a chocolate hazelnut spread or even a berry compote instead of the speculoos if you want to take your French toast to a whole new level.
SERVES 4
1 good sourdough loaf or bread
of your choice
2 free-range eggs, beaten
200ml milk
1tsp vanilla extract
1tsp ground cinnamon
Low-calorie oil spray
1tbsp caster sugar
2tbsp smooth speculoos spread
(I use Biscoff)
1 Cut up the sourdough or bread of choice into chunks – you can get rid of the crust if you prefer it softer.
2 Combine the eggs, milk, vanilla and cinnamon. Dip the bread chunks into the mixture to lightly coat, shake off the excess, then spray really well with the low-calorie oil and air-fry at 190°C for 6-7 minutes.
3 Once cooked, sprinkle with the caster sugar.
4 Melt the Biscoff spread in a microwaveable bowl in the microwave for 50-60 seconds, then drizzle over the toast bites.
’Nduja stuffed arancini balls
You can either use leftover rice for these or cook some fresh, but if you do this, I find it’s better to cook i
