A cheesy comfort with a supermarket staple
What’s the worst vegetable to have on a boat? A leek. Although we’re at a loss to understand why, as the leek is an excellent vegetable to have around, on a boat or anywhere else.
Despite being low in calories, leeks are stuffed with antioxidants, minerals and vitamins, such as vitamin K1 for heart health and blood clotting (useful if you’re in the habit of falling off your bike). Leeks are also packed with vitamin A, which helps maintain good vision (useful for spotting the potholes that make you fall off your bike).
Leeks are cheap, and this recipe from The Cycling Chef Alan Murchison combines them with potatoes as a tasty way to get your fill of vitamin C for immune system boosting, potassium for preventing cramps, and fibre-rich carbs for sustained energy levels. The flavour gap is plugged with a chunk of Stilton and a glug of single cream.
What’s more, a leek could prove very handy on a boat in the event that you need to plug a hole.

350g cooked new potatoes, sliced
90g Stilton
150ml single cream
25g butter, melted
3tsp chopped walnuts
