Make use of your air-fryer with these indulgent brunch recipes from chef Dean Edwards

French toast croissant bake

This dish was born from my love of French toast, and it has the classic flavour combinations you'd expect – though I love it as a dessert too. It’s also a great way to use up any stale croissants you may have lurking in the bread bin.

■ Serves 4 ■ Prep 5 mins ■ Cook 15 mins

3 eggs, lightly beaten
50g caster sugar
¼ tsp ground cinnamon
100ml milk
butter, for the dish
3 large croissants, torn into pieces
(about 200g in total)
70g blueberries
double cream, to serve

1 Heat the air-fryer to 160C. Whisk together the eggs, sugar, cinnamon and milk in a bowl until combined.

2 Butter a baking dish measuring about 20 x 15cm. Put the croissant pieces in the dish, then pour over the egg mixture. Leave to sit for 5 mins, then scatter over the blueberries, tucking a few between the croissants.

3 Place the dish into the air-fryer drawer and cook for 15 mins. Serve with a drizzle of double cream.

Sausage & cheese muffins

This is a weekend treat. I’ve added some extra flavourings to my patties, but if you find a sausage flavour combination that you like, you can use that without the additional ingredients. Why not throw a few hash browns into the air fryer to serve with these, too?

■ Serves 4 ■ Prep 15 mins ■ Cook 10 mins

4 good-quality sausages,
(about 300g in total)
1 tsp dried thyme
(optional)
1 tsp garlic granules
(optional)
4 cheese slices
4 muffins, halved and toasted
4 eggs, fried to your liking
ketchup or brown sauce, to serve
(optional)

1 Remove the skin from the sausages and put the meat into a bowl, then add the thyme and garlic granules, if using. Mix well, then shape into 4 patties, each slightly bigger than the muffins. Chill until needed.

2 Heat the air-fryer to 200C. Put the patties on the crisp plate inside the air-fryer drawer, then cook for 10 mins, turning halfway through.

3 Put a slice of cheese on the bottom half of a toasted muffin, add the sausage patty, then top with a fried egg. Add a little ketchup or brown sauce, if you like, season with freshly ground black pepper, then top with the other half of the muffin. Repeat to make the remaining muffins.
