Do carrots really help you see in the dark?
The myth isn’t too far-fetched. Carrots are rich in an orange pigment called beta-carotene. Enzymes in the body convert beta-carotene into a form of vitamin A known as retinol, which is vital for eye health.

1.Sticky carrots with beans & feta

Boil 300g baby carrots until tender. In a heavy-based pan, melt 50g unsalted butter. When foaming, add 2 tbsp golden caster sugar and cook over a medium heat until golden and the sugar has dissolved. Stir in the carrots and a 410g can butter beans, drained and rinsed. Crumble over 200g feta and a handful of roughly chopped parsley. Serves 4.

2.Healthy carrot & sweet potato mash

Chop 500g carrots and 500g peeled sweet potato. Put in a pan of salted water and boil for about 15-20 mins until soft. Drain well and mash with 1 tbsp olive oil. Season to taste. Delicious with roast chicken. Serves 4.

3.Carrot & cumin burgers

Combine 300g grated carrot, 2 tbsp tahini and 1/2 grated onion in a bowl. Blend 200g chickpeas in a food processor and add to the carrot mix with 1 beaten egg, 50g breadcrumbs, 1 tsp ground cumin, zest of 1 lemon and seasoning. Mix well and form into four burgers. Coat in 1 tbsp cumin seeds. Chill for 30 mins. Heat 2 tsp vegetable oil in a pan. Cook the burgers for 4 mins each side, turning carefully. Serves 4.

4.Carrot & roast pepper purée

Gently cook 300g sliced carrots in a little butter and 1 tbsp water for 30 mins in a pan with the lid on. Grill 1 halved red pepper until charred. Leave for 10 mins, then peel and remove the seeds. Whizz the carrots and pepper with 1 tbsp red wine vinegar until smooth. Serve with chicken. Serves 2.

5.Quick carrot & walnut bread

Mix 350g plain flour with 150g wholemeal, 1 tsp salt and 2 tsp bicarbonate of soda, then stir in 150g grated carrot, a handful of walnuts and 300ml low-fat Greek-style yogurt, followed by enough milk from 125ml to make a soft, quite sticky dough. Tip onto a floured surface and form a flat ball. Put on a baking sheet, slash the top and bake at 230C/210C fan/gas 8 for 30 mins. Cuts into 10 slices.
