Three ways with leftover feta
Feta eggs
Heat 1 tbsp vegetable oil in a medium frying pan over a medium heat and crumble in 100g feta. Leave briefly to melt, then crack 2 eggs over the cheese and fry until cooked to your liking. Sprinkle over chilli flakes and chopped corianderto serve.
Marinated feta
Cut any leftover fetainto cubes and pack into a sterilised jar with lemon or lime zest, dried herbssuch as oregano or marjoram and spices such as Aleppo pepper, cumin seeds or nigella seeds, then cover with olive oil. Will keep chilled for up to a week.
Feta & antipasti toastie
Top a slice of bread with jarred antipasti(peppers and artichokes work well), then scatter over crumbled feta and sliced black olives. Top with another slice of bread and fry in a hot pan, turning once until browned on both sides and the cheese has melted.
