Moroccan freekeh traybake

Remember, with tomatoes, local isn’t always as important as growing methods (see page 134). You can also improve the carbon score of this recipe by using courgette in summer, or squash in autumn, for a 23 per cent reduction in emissions. In winter, cauliflower will have 21 per cent less impact.

SERVES 2 PREP 5 mins COOK 30 mins EASY V

2 tbsp olive oil
400g can chickpeas, rinsed
and drained
1 tsp ground coriander
1 tsp ground cumin
½ tsp chilli flakes
270g cherry tomatoes
½ x 400g can apricot halves,
drained and roughly chopped
70g green olives
250g pouch cooked freekeh
70g fat-free yogurt
small bunch of dill, chopped, plus
a few extra fronds to serve

1Heat the oven to 200C/180C fan/gas 6. Toss the olive oil with the chickpeas, spices and chilli flakes in a medium roasting tin. Roast for 15 mins or until the chickpeas are beginning to crisp and turn golden brown. Add the tomatoes, apricots, olives and freekeh to the pan and toss everything together. Return to the oven for 10-15 mins until the tomatoes start to burst and everything is piping hot. Season.

2Combine the yogurt with the chopped dill and season with salt. Serve the freekeh with the dill fronds scattered over and the herby yogurt on the side.

Teriyaki pork meatballs

Meat will increase the carbon calories in a recipe, but the important thing is finding a balance – this dish uses just a few ingredients. Plus, you can always offset emissions by having our ramen (below) for lunch the next day.

250g dried medium egg noodles
2 tbsp sunflower oil
12 pork meatballs
250g pak choi
6 tbsp teriyaki sauce

Cook the noodles following pack instructions. Meanwhile drop the oil into a frying pan over a medium heat. Fry the meatballs for 3 mins or until golden brown all o
