From light avocado linguine, to cheesy, comforting bakes, these easy meals are sure to satisfy

Tuna & sundried tomato pasta bake

SERVES 6 PREP 10 mins COOK 15 mins EASY

500g rigatoni (or any short pasta)

2 x 400g cans chopped tomatoes

4 thyme sprigs, leaves picked

300ml double cream

280g jar sundried tomatoes, drained and quartered

198g can sweetcorn with no added salt, drained

3 x 120g cans tuna in spring water, drained

100g cheddar, grated 50g parmesan, grated

1 Heat the grill to its highest setting. Cook the pasta in a pan of boiling water for 1 min less than the pack instructions, then drain, reserving a little of the water.

2 Meanwhile, tip the chopped tomatoes into a pan with the thyme and a little seasoning, bring to a simmer and cook for 5 mins. Pour in the cream, stir and simmer for another 4-5 mins.

3 Tip the drained pasta back into the saucepan. Pour over the tomato sauce, sundried tomatoes, sweetcorn, tuna and a splash of the reserved water. Layer into a baking dish (ours was 22 x 29cm), scattering over the grated cheddar between layers. Sprinkle the parmesan on top and slide under the grill for 5 mins until bubbling and golden.

Cheesy ham & broccoli pasta

SERVES 4 PREP 10 mins COOK 15 mins EASY

300g pasta (we used conchiglie) 1 broccoli, cut into small florets 1 tbsp olive oil 1 onion, finely chopped 2 garlic cloves, crushed

250g thick ham, cut into chunks

300ml double cream

1 tbsp English mustard

140g mature cheddar, grated

1 Cook the pasta in a pan of boiling water following pack instructions, adding the broccoli florets for the final 4 mins of cooking. Drain and set aside.

2 Meanwhile, heat the oil in a large pan over a medium heat and cook the onion for 5 mins to soften, then stir in the garlic and cook for 1 min more. Stir in the ham, cream and mustard. Bring to the boil. Add the pasta and broccoli, then stir in the cheese to coat everything in the sauce.
