If your family loves a hearty traditional chilli, you have to try this alternative. This simple, slow-cooked, flavourful white chicken chilli is my favourite thing to come home to at the moment. Made with hearty beans, tender chicken and a rich, creamy broth, it’s super-satisfying and really simple to make.

SERVES 4-6 PREP 20 mins COOK 6-8 hrs EASY

6 boneless, skinless chicken thighs

1 onion, chopped

4 garlic cloves, chopped handful of parsley, finely chopped handful of basil, finely chopped

400g can cannellini beans, drained

150g can sweetcorn, drained

2-8 tbsp buffalo hot sauce (depending on how spicy you like it)

2 tsp smoked paprika

500ml chicken stock

3 tbsp soft cheese

400g grated cheddar

1 lime, juiced handful of coriander, chopped tortilla chips, to serve

1 Put the chicken thighs in a slow cooker along with the onion, garlic, parsley, basil, cannellini beans, sweetcorn, hot sauce, half the paprika and the stock. Cook on low for 8 hrs, or on high for 6 hrs.

2 Stir in the soft cheese, 300g of the cheddar and the lime juice. Ladle the chilli into bowls and serve topped with the coriander, remaining cheddar and paprika, and the tortilla chips on the side.

This creamy, slow-cooked soup is great for when you want lasagne, but don’t want to do all the work that goes into it. Delicious beef is simmered with vegetables, spices, a creamy tomato sauce and lasagne sheets. Finish each bowl with a sprinkle of parmesan and serve with a slice of garlic bread.

SERVES 4 PREP 15 mins COOK 6 hrs 10 mins EASY

1 onion, chopped

2 red peppers, chopped

6 garlic cloves, chopped, or

2 tbsp garlic purée

250g beef or chicken mince

1 tbsp tomato purée

1 tbsp dried basil

1 tbsp dried oregano

1 tbsp dried thyme

½ tsp chilli flakes (optional)

400g can chopped tomatoes

800ml chicken stock

8 lasagne sheets

100ml single cream handful of grated parmesan, plus extra to serve garlic bread, to serve

1 Put the onion, peppers, garlic and mince in a slow cooker and season with salt and pepper. Add the tomato purée, basil, oregano, thyme and chilli flakes, if using. Add the chopped tomatoes and stock, and stir well. Cook for 6 hrs on low.
