Although turkey and trimmings make Christmas, delicious snacks and party food is also a festive tradition! Feast your eyes on this lot . . .

Smoked Trout Blinis

Ingredients (Makes 16)

◆ 16 cocktail blinis

◆ 100g crème fraîche

◆ 50g hot horseradish sauce

◆ 100g smoked trout, torn into strips

◆ Few chives, cut into 2.5cm lengths, to garnish

1 Preheat the oven to 190°C/fan170°C/Gas 5. Place the blinis on a baking tray and warm through for 4-5 minutes. Meanwhile mix the crème fraîche and horseradish together in a small bowl.

2 Place a teaspoon of crème fraiche mix on top of each blini. Add a coiled strip of trout and garnish each blini with 2 chive pieces.

Cucumber And Crab Canapés

Ingredients (Makes 12)

◆ ½ cucumber

◆ 100g white crab meat

◆ 2 spring onions

◆ 1tbsp chopped coriander

◆ 1tbsp sweet chilli sauce

1 Cut the cucumber into 12 x 5mm slices. Cut one spring onion in half and finely shred. Set aside. Finely chop the remaining spring onions.

2 In a bowl mix together the crab meat, chopped spring onions, coriander and chilli sauce. Pile on to the cucumber discs. Garnish with shredded spring onions and serve.

Prawn Scoops

Ingredients (Makes 12)

◆ 1 head red chicory

◆ 1 baby gem lettuce

◆ 3tbsp mayonnaise

◆ 1tbsp mango chutney

◆ 2tsp freshly grated ginger

◆ ½ ripe mango, finely diced

◆ ½ red onion cut into thin strips

◆ 1tbsp chopped coriander leaves

◆ 12 king prawns, halved

1 Separate the chicory and lettuce into 6 separate leaves of each, selecting the widest chicory leaves. In a bowl, mix the mayonnaise, chutney and ginger together then stir in half the mango and onions. Divide between the leaves.

2 Sprinkle over the remaining mango, onions and coriander. Top each leaf with 2 pieces of prawn and serve.

Soy Beef Bites With Dipping Sauce

Ingredients (Makes 15)

◆ 250g fillet or sirloin steak

◆ 1tbsp soy sauce

◆ 2tsp clear honey

◆ 2tsp sunflower oil

◆ 1tbsp sweet chilli sauce, plus extra for dipping

◆ 2tsp sesame seeds

◆ 1 red pepper, halved and deseeded

◆ 12 wooden or rosemary skewers

1 Cut the beef into 14-15 x 2.5cm cubes. In a small dish mix together the soy sauce, honey, oil, chilli sauce and sesame seeds. Add the meat and stir to coat. Cover and leave to marinate in the fridge for an hour.
