Strawberry, Tomato And Burrata Summer Salad

Ingredients (Serves 2)

◆ 250g cherry tomatoes

◆ 125g strawberries

◆ 2tbsp extra virgin olive oil

◆ 2tbsp balsamic vinegar

◆ Handful fresh mint, leaves picked and chopped

◆ Handful fresh basil, leaves picked and chopped

◆ Salt and freshly ground black pepper

◆ Fresh burrata

◆ Croutons (optional)

1 Halve or quarter the strawberries and tomatoes depending on their size, then put them in a bowl with the balsamic, the olive oil and some salt and pepper. Stir to mix everything together then leave to sit for 20 minutes.

Add the mint and basil to the bowl, mix everything again, then tip the whole lot on to a serving plate. Top with the burrata, the croutons if using, a final drizzle of olive oil and some freshly cracked pepper.

Asian Prawn Noodle Salad

Ingredients (Serves 2)

◆ 300g egg noodles, cooked and left to cool

◆ 150g cooked and peeled king prawns

◆ 100g beansprouts

◆ 1 small carrot, cut into thin batons

◆ 1 red chilli, thinly sliced

◆ 2-3 spring onions, sliced

◆ Small bunch fresh coriander, roughly chopped
For the dressing:

◆ 1tbsp sesame oil

◆ 1tsp rice wine vinegar

◆ 1tbsp honey

◆ 1tbsp light soy sauce

◆ 1tsp crushed ginger

◆ 1 crushed garlic clove

1 First, mix the dressing ingredients together and set aside. Meanwhile, add your cold noodles, beansprouts, carrot and the prawns into a bowl.

2 Add the dressing to the bowl and toss until all the vegetables and prawns are evenly coated. Divide between bowls and top with the spring onion and coriander. Serve up and enjoy!

Sticky Halloumi Honey Salad

Ingredients (Serves 2-3)

◆ 150g mixed leaves (spinach, rocket, lettuce etc)

◆ 225g block halloumi

◆ 1 pomegranate, seeds removed

◆ 1tsp za’atar (a Middle Eastern spice mix, usually cumin, oregano and thyme)

◆ Juice of half a lemon

◆ 1tbsp pomegranate molasses

◆ 1tbsp hot honey (or 1tbsp regular honey and a pinch of chilli flakes)

◆ 1tbsp extra virgin olive oil

1 Make the dressing by combining the lemon juice, za’atar, pomegranate molasses, hot honey and olive oil. Stir to combine and set
