Ingredients (Serves 8)

◆ 750g potatoes, peeled and diced

◆ Low-calorie cooking spray

◆ 1 medium onion, peeled and finely diced

◆ 80g reduced-fat mature Cheddar cheese, grated

◆ 2tsp Henderson’s relish

◆ 2tsp skimmed milk

◆ 1tsp mustard powder

◆ 2 eggs, yolk only

◆ 70g breadcrumbs

◆ 1 egg

◆ Sea salt and freshly ground black pepper, to taste

1 Cook the potatoes in a pan of boiling water over a medium heat for around 15 minutes, or until a knife slides easily through a potato. Drain well and return to the pan, then mash with a potato masher and set to one side to cool.

2 Spray a frying pan with low-calorie cooking spray. Add the onion and cook over a moderate heat until they start to soften, then add the cooked onions to the mashed potato, along with the cheese, Henderson’s relish, milk, mustard powder, 1 egg yolk and a pinch of salt and pepper. Mix thoroughly.

3 On a plate, spread out the breadcrumbs.

4 In a separate bowl, beat the egg with the remaining egg yolk. Separate the mash mixture into 16 portions and roll each of these into a sausage shape.

5 Dip a croquette into the egg, then place it on top of the breadcrumbs and gently roll from side to side, ensuring the croquette is completely covered. Repeat for the rest of the croquettes.

6 Place the croquettes in the air fryer, ensuring that they do not touch each other. You may need to cook these in batches, depending on the size of your air fryer. Air-fry at 180°C for 10 minutes.

Allow to cool for a few minutes before serving.

TIPS: If the croquettes lose their shape when the are dipped into the egg mixture, you can re-shape them once they are covered in breadcrumbs before cooking in the air fryer. Using slightly damp hands when shaping the croquettes will stop them sticking to your fingers.
