WASTE NOT, WANT NOT

Turn your Christmas leftovers into a delicious Boxing Day meal with a zero-waste chef’s recipe.

Leftovers ragu

Meat carcass

Olive oil

Leftover meat (turkey, goose, beef or whatever meat was the centrepiece of your Christmas table) picked from the bones

4 garlic cloves, 2 finely chopped

2 bay leaves

2 shallots, finely diced

1 carrot, finely diced

3 celery sticks, finely chopped

Pinch of fresh thyme

1/2 a bottle of good-quality leftover wine (red for dark meats, white for white meats)

Sea salt

Pasta of choice

Black peppercorns, optional, to taste

Fresh parsley, optional, to taste

1 Preheat oven to 220°C (200°C fan) mark 7. Add the carcass to a roasting tray with a little olive oil. Place in the oven for 20min, or until deeply golden brown. Lower the oven heat to 180°C (160°C fan) mark 4.
