Leftovers ragu
• Meat carcass
• Olive oil
• Leftover meat (turkey, goose, beef or whatever meat was the centrepiece of your Christmas table) picked from the bones
• 4 garlic cloves, 2 finely chopped
• 2 bay leaves
• 2 shallots, finely diced
• 1 carrot, finely diced
• 3 celery sticks, finely chopped
• Pinch of fresh thyme
• 1/2 a bottle of good-quality leftover wine (red for dark meats, white for white meats)
• Sea salt
• Pasta of choice
• Black peppercorns, optional, to taste
• Fresh parsley, optional, to taste
1 Preheat oven to 220°C (200°C fan) mark 7. Add the carcass to a roasting tray with a little olive oil. Place in the oven for 20min, or until deeply golden brown. Lower the oven heat to 180°C (160°C fan) mark 4.
