Stir diced peppers, tomatoes and cucumber through couscous and top with tinned mackerel fillets in spicy tomato sauce, which acts as a dressing. Scatter with rocket.

Combine drained tuna with a spoonful of natural yogurt, chopped spring onions and grated cheese. Spoon on top of halved baked potatoes and pop under the grill until bubbling and golden.
