All too often vegan or vegetarian articles try to wave away the hesitancy of their detractors by distancing themselves from nut loaves and ‘brown food’. To me, this denigrates wonderful, deeply comforting dishes. My family and I are committed carnivores but every so often crave a nut loaf or walnut balls and the delicate sweetness of the nuts contrasting with the savouriness of mushrooms, onions or other ingredients. Nothing else will do. By all means let’s celebrate veg – but let’s not vilify the nut loaf!

Our air fryer tips (Jan issue) and recipes have struck a chord

Your ‘Turn your oven off’ article was great timing after ‘Father Christmas’ (the hubby) got me an air fryer. I’d been asking for one for ages but had no idea what to do with it. Here’s to an economical and energy-efficient 2023 and beyond!

I am trying to save energy and lower costs so bought an air fryer. After reading your tips, I baked a cake in it with great results – before then I’d only used it for veg and warming stuff up. Goodbye oven costs!

I spent the weekend with friends and decided to make and take the air fryer carrot cake cookies – they went down so well and everyone was shocked they’d been made in an air fryer. I can’t wait to try more recipes.

Under ‘things not to cook in an air fryer’, you included bread. I had been making my own bread conventionally for a long time, but now cook it in an air fryer and it’s brilliant. I’d certainly recommend it.
