Pieminister: Live & Eat Pie by Tristan Hogg and Jon Simon

TAKE 5 INGREDIENTS

Make good use of in-season spuds with this flavour-packed side dish.

Preheat the oven to 200°C, fan 180°C, gas 6. Put 1kg Jersey Royals in a large pan of cold water and bring to the boil. Simmer for 12 minutes, then drain and tip into a roasting tray. Lightly break up with a potato masher, without crushing them too much, then drizzle with olive oil and season well. Roast for 20 minutes, until golden. Gently heat 30g butter, 50g clear honey and ½-1 tsp chilli flakes, depending on how much heat you like, in a pan. Pour this over the potatoes and then return to the oven for 15-20 minutes more, until very crisp. Scatter over the zest of 1 lime to serve.
