TAKE 5 INGREDIENTS

A smash burger is flattened or smashed to a thin patty while it cooks quickly in a very hot pan, creating a crisp outer crust and a juicy interior.

Slice 1 sweet onion finely, set aside. Shape 500g 20% fat beef mince into 4 compact balls. Heat a dry frying pan and once hot add 2 meat balls. Pile a quarter of the onion on top of each, then, using a flat spatula and a potato masher placed directly on top, press firmly on the balls to flatten to thin patties. Season and cook for 2-3 minutes on a high heat until a dark crust has formed. Meanwhile, toast 2 split brioche buns and spread one side with burger sauce. Flip, season, then top each patty with a slice of chilli cheddar. Cook for 2-3 minutes then stack the patties one on top of the other and transfer to a bun base. Add more burger sauce and any other toppings of your choice, and finish with the bun top. Repeat for the second burger.
