Louise Minchin shares her healthy eating secrets

I AM UTTERLY FOCUSED ON GUT HEALTH; the science makes sense to me and it’s made the biggest change to the way I eat. There is always kefir in the fridge, and variety is important: I eat a heap of nuts, but now instead of just cashews, I eat mixed nuts, and instead of carrots or tomatoes in orange or red, I buy them in every colour I can find. Rainbow is my new thing.

PORRIDGE MAKES ME FEEL BETTER. When I was training for the London Marathon this year, I’d always have it for breakfast. I know if I eat it, I won’t be hungry until lunchtime.

EVERY YEAR THAT PASSES,S, I get more conscious about what I eat. When I am training for something major, such as when I cycled across Argentina, I take good care of myself. I’m a 54-year-old menopausalal woman, so I make sure I fuel my body after exercise as well as before. I opt for protein: a chunk of cheddar, chicken or a decent handful of nuts.

A PERFECT SUMMER MEAL would be beef fillet rolled in herbs, cooked briefly on the barbecue, with lots of Middle Eastern salads on the side – interesting dishes with yogurt, pomegranate and dates.
