3 WAYS TO… USE UP EXCESS MILK

Stir 1 tablespoon of lemon juice into 250ml milk and leave to curdle for 5 minutes. It makes an easy alternative to buttermilk for light, fluffy Americanstyle pancakes, scones and cakes.

Perfect when you have a lot of milk past its best-before date: boil 1.5 litres milk and add 2-3 tablespoons vinegar until it separates into curds and clear whey. Strain through a clean cloth then press with weights until firm. Dice and add to curries.

Replace the water in your favourite white loaf recipe with milk to give it a softer, fine-crumbed texture.
