PASS THE BISCUITS

‘These are my Cornish fairings (February) that I made at the start of the February half-term break. It took a lot of willpower not to eat them all before I took a photo to send to you! They were yummy and so easy to make.’

WINNER

‘After Christmas I always look for new healthy recipes to tempt the family with after all the turkey and mince pies. I tried the miso salmon and veg traybake (January). It was so easy to make and plates were scraped clean. Family loved it!’

CLEMENTINE CAKE

‘There are lots of lovely citrus fruits in the shops just now, including the clementines I used in this whisky marmalade cake (February). I also used homemade marmalade! Love this orange time of the year.’

MOVING MEMORIES

I’ve always loved the back page feature ‘My Most Memorable Meal’ and the way food can transport you to a favourite place or person. But none has been more memorable than Michael Rosen’s wonderfully told account of his stay in hospital and the puréed cottage pie given with so much care. Being such a gifted wordsmith he was able to transport me into the moment and to convey the enormity of the gratitude he felt. Magical reading, thank you to whoever invited him to the page.

A TEA-TIME TREAT

While browsing your February issue, I came across the heritage recipe for Cornish fairings. This brought back more than a hint of nostalgia. I grew up in a small Cornish village in the 60s. Furniss Cornish Fairings were considered a real treat at tea-time. I immediately cooked a batch. There is no way they were going to be stored for two weeks in an airtight container; they were gone in a few days! By the way, Cornish fairings, like their Cornish counterparts pasties and jam and cream scones, always taste better with a cup of tea.
