Even easier falafel

With every book I write, I spend a week getting obsessed with making falafel easier and easier, and now I think I’ve finally done it! Oven-roast the chickpeas for that falafel crunch, and chuck in the rest of the usual ingredients for that classic flavour.

YOU WILL NEED

100g chickpeas (from a 400g tin), drained 1tbsp olive oil 1tsp ground cumin Small handful of coriander, chopped 1 pitta bread, toasted Salad (lettuce, onion and tomatoes) Dollop of houmous

HOW TO DO IT

1 Preheat your oven to 180C/Gas 4. Put the chickpeas in a baking tray, then drizzle with olive oil, season with salt and pepper, and sprinkle over the cumin. Roast for about 20 mins until crispy, then remove from the oven and stir in the chopped coriander.

2 Stuff into a toasted pitta bread with whatever salad you’ve got, plus a big dollop of houmous. Enjoy straight away.

Cauliflower-larb lettuce cups

A lovely summer dish, and easy to scale up to enjoy with friends. Just place a big bowlful in the middle of the table and everyone can dig in and make their own lettuce wraps.

YOU WILL NEED

½ red onion, finely diced ¼ head of cauliflower, chopped into small florets Olive oil 1 garlic clove, grated or crushed Pinch of dried chilli flakes Pinch of curry powder A few lettuce leaves Chopped coriander and lime, to serve

HOW TO DO IT

1 Season the onion and cauliflower, then pan-fry in a splash of olive oil over a medium heat for about 6 mins. Add the garlic, chilli flakes and curry powder, and continue to fry for a few more mins until all is golden brown.
