Chicken and chorizo pot pie

A hearty dish packed full of flavour.

SERVES 4

PREP 20 mins, plus cooling COOK 30-40 mins

✱ 1tbsp olive oil

✱ 200g diced chorizo

✱ 2 red onions, sliced

✱ 1 red pepper, diced

✱ 2tbsp plain flour

✱ 200ml dry cider, or chicken stock

✱ Zest 1 lemon

✱ 650g cooked chicken meat, roughly shredded

✱ 100g pitted black olives, halved

✱ Small bunch parsley, chopped

✱ 1 medium egg, beaten

✱ 320g roll puff pastry

✱ 24cm shallow casserole dish or a large, ovenproof frying pan

1 Heat the oil in the casserole dish or frying pan. Add the chorizo and cook for 5-6 mins, until starting to crisp. Add the onions and pepper and cook for 10 mins, until softened.

2 Add the flour and cook, stirring for 2 mins, then slowly mix in the cider or stock. Bubble for 2 mins, then stir in the lemon zest, chicken, olives and parsley. Set aside to cool.

3 Heat the oven to 180C Fan/Gas 6. Brush the edge of the dish with the beaten egg. Roll out the pastry, so it’s just large enough to cover the top. Lay over the pastry, pressing firmly around the edges to seal, then trim off the excess. Cut several slits in the pastry to allow steam to escape. Brush with the egg and bake on a tray for 30-40 mins until the pastry is puffed and golden.

To stop the pastry lid from shrinking in, we suggest cutting out a few long strips of pastry and attaching these around the rim of the dish with beaten egg. Brush again with the egg before securing the pastry on top.

Pulled chicken, chilli-loaded jacket sweet potatoes

The spicy, slow-cooked chilli is a great topping that can also be served as nachos or on rice.

SERVES 5 PREP 10 mins COOK 2hrs 15 mins

✱ 10 skinless and boneless chicken thigh fillets

✱ 2 red onions, sliced

✱ 4 fat garlic cloves, sliced

✱ 1tsp ground cumin

✱ 1tsp ground coriander

✱ 1tsp dried oregano

✱ 2tbsp chipotle chilli paste

✱ 400g passata, plus the contents of the container when rinsed out with a splash of water

✱ 1 chicken stock pot

✱ 330ml lager

✱ 5 sweet potatoes

✱ 5tbsp soured cream

✱ 200g Cheddar, grated

✱ Guacamole

✱ Finely chopped red onion, tomatoes and spring onion

✱ Lime wedges

1 Add a splash of olive oil to a casserole and fry the chicken until golden (about 8 mins), set aside, then add the onions and garlic and cook for 5 mins.
