Enjoy these midweek meals using just five ingredients
Tomato & garlic mussels
Serves: 4 Takes: 30min
Cost per serving: £1.65
1 red onion, finely chopped
2 garlic cloves, finely chopped
150ml dry white wine
400g can cherry tomatoes
1kg live mussels, scrubbed under running water (see Cook’s Tip)
1 Heat 1tbsp oil in a large saucepan over a medium heat. Add the onion and garlic and cook, stirring, for 5-6min or until softened.
2 Stir in the wine and bring to the boil, then add the tomatoes. Reduce the heat and simmer for 3-4min. Season with salt and pepper. Add the mussels, cover the pan with a tight-fitting lid and cook for 6-7min or until the mussels have opened, shaking the pan once or twice. Discard any mussels that stay closed after the cooking time.
3 Serve garnished with freshly chopped flat-leaf parsley and lemon wedges, along with fries and a green salad, if liked.
Veggie satay noodles
Serves: 4 Takes: 20min
250g pkt fine egg noodles
2tsp sesame oil
1tbsp garlic and ginger paste
600g pkt stir-fry vegetable mix
120g pkt satay stir-fry sauce

1 Cook the noodles in a large saucepan of boiling water according to the pack instructions. Drain well, refresh under cold water and set aside.
2 Heat the oil in a large wok or frying pan over a high heat. Add the garlic and ginger paste and stir-fry for 1min. Add the vegetable mix, lower the heat to medium, and stir-fry for 2-3min or until the vegetables are just tender (see Cook’s tip).
3 Add the noodles and stir-fry for 1-2min until heated through. Add the satay sauce and stir-fry for 1min. Serve immediately with a squee
