She suggests prepping the delicious gooeyness the night before and popping it in the oven minutes ahead of your guests’ arrival. We’re not saying said friends will think you’re deserving of your own cooking show, but we’re not not saying that either. So just prepare for a lot of ‘hey, should we have another dinner soon?’ WhatsApps, okay?
Overnight mac and cheese
SERVES 6
340g macaroni 1L double cream 360g gruyère, grated 180g strong cheddar, grated ½ tsp ground nutmeg 3 tbsp unsalted butter, plus extra for greasing the dish 6 slices of white bread for breadcrumbs (see note below)
1. A day before you plan to serve, bring a large pot of water to a boil. Add 2 tbsp salt and the pasta and cook for 4 mins (it will be undercooked). Drain (don’t rinse) and set aside.
