Tortilla with a sweet potato twist

This has been the year of the Basque Country. The autonomous region in northern Spain played host to the Grand Départ of the 2023 Tour de France, with the opening stage around Bilbao serving up a thrilling head-to-head battle between British twins Adam and Simon Yates. In the final kilometre, Adam (the younger by five minutes) outpaced his brother on the climb to take the first maillot jaune of the race.

Almost as exciting, it was also in the Basque Country that The Cycling Chef, Alan Murchison, was shown how to make a different version of a classic Spanish tortilla using sweet potato and considerably less oil. And here it is.

Sweet potatoes are high in fibre, which helps to keep everything running smoothly internally. The orange colour of sweet potatoes is due to them being incredibly rich in beta-carotene, which is converted to vitamin A in the body and is responsible for fighting illness and infection – particularly handy now that autumn is on the way. Just 100g of sweet potato provides the recommended daily amount of vitamin C, and there’s 500g of it in this recipe.

Just one more thing: it can be quite heavy, so save this tortilla for soft-pedalling days.

Sweet potato tortilla, Vittoria-style

INGREDIENTS

500g sweet potato (peeled weight)

8 large, free-range eggs

2tsp BBQ spices 1 1/2tbsp olive oil Sea salt and freshly ground black pepper Green salad to serve

Method

• Preheat the oven to 180°C. Meanwhile, chop the sweet potato evenly and mix in a bowl with the BBQ spices and olive oil. Season well and arrange in a 25cm non-stick ovenproof pan.
