Sticky chicken drumsticks

These sweet and tangy soy and honey-glazed drumsticks are a great meal with crisp baked potato wedges and a crunchy green salad.

SERVES 4 PREP 5 mins plus marinating COOK 35 mins EASY

8 chicken drumsticks

2 tbsp soy sauce

1 tbsp honey

1 tbsp olive oil

1 tsp tomato purée

1 tbsp Dijon mustard

1 Make 3 slashes on each of the drumsticks using a sharp knife. Mix the soy, honey, oil, tomato purée and mustard together, and pour this mixture over the chicken. Turn to coat thoroughly and leave to marinate for 30 mins at room temperature (or overnight in the fridge). Heat the oven to 200C/180C fan/gas 6.

2 Tip the drumsticks into a shallow roasting tin and cook for 35 mins, turning occasionally until the chicken is cooked through, tender and glistening.

This marinade is also delicious with pork. Try marinating spare ribs and slow-roasting them until the meat is sticky and falling off the bone.

A fragrant, spiced coconut curry served with basmati rice that makes a super-easy family supper.

SERVES 4 PREP 10 mins COOK 45 mins EASY

4 corn cobs

1 tbsp olive oil

1 onion, finely sliced

1 garlic clove, crushed

1 thumb-sized piece of ginger, peeled and finely grated

1 tsp ground cumin

1 tsp ground coriander

½ tsp chilli powder

2 tsp ground turmeric 400ml can coconut milk

400g can cherry tomatoes

4 cod loin fillets

150g raw king prawns small handful of coriander, sliced red chillies, cooked basmati rice and lime wedges, to serve

1 Heat the oven to 200C/180C fan/gas 6. Cook the corn cobs in a pan of lightly salted boiling water for 10 mins. Drain and leave to cool slightly. Stand the cobs upright on a board and slice the kernels off using a sharp knife in a downward motion along the length of the cob.

2 Heat the olive oil in a large frying pan over a medium heat and cook the onion with a pinch of salt for 10 mins until golden and caramelised.
