Pizza Frittata

Ingredients (Serves 2)

◆ 6 large eggs

◆ Salt and freshly ground black pepper

◆ 2tsp Italian seasoning

◆ 1tbsp olive oil

◆ 100g tomato passata

◆ 125g grated mozzarella

◆ A few fresh basil leaves

◆ Your choice of toppings

1 Beat the eggs together and mix in some salt, pepper and 1tsp of the Italian seasoning. Place a large oven-proof pan over a medium-high heat and add the oil. Pre-heat your grill to its highest setting.

2 Add the beaten eggs to the pan and leave to cook for 2-3 minutes. Mix the remaining Italian seasoning with the passata and pour over the top of the eggs (don’t worry if they’re not set on top yet).

3 Scatter over the cheese, a few torn basil leaves and your choice of toppings. Place the pan under the grill and cook until the cheese has melted and bubbled. Slice and serve!

Classic Carbonara

◆ 75g guanciale or pancetta, diced

◆ 150g spaghetti or linguine

◆ Salt and pepper

◆ 2 medium eggs

◆ 50g pecorino

◆ 25g parmesan

1 Place a large, non-stick frying-pan over a medium heat. Once hot, add the guanciale or pancetta and cook for a few minutes until crisp. Meanwhile, cook the pasta in large pot of salted, boiling water for 1 minute less than packet instructions.

2 In a bowl, combine the eggs, pecorino, parmesan and a generous grind of black pepper and set aside.

3 Lift the pasta out of the water straight into the pan with the guanciale, reserving the pasta cooking water, and toss to mix the pasta in the oil from the guanciale. Remove from the heat, then tip the spaghetti/guanciale mix into the bowl with the egg mixture. Quickly mix the pasta with the egg mixture, adding a little pasta water to loosen the sauce if required. 4 Divide between two bowls and top with an extra grating of parmesan, if you like.
