There’s a recipe for malted rice pudding in my book, which goes really well with cherries. The malt is sweet and the rice pudding creamy, and you need a tart fruit to go with things like that. Pop them in a pan with a bit of sugar so that the juice goes syrupy, and spoon them over.

TUNNOCK’S TEACAKES

We all need a treat that we love, and these bring me a lot of happiness. They helped with motivation when writing the book, too – I’d sit down with my notepad, make myself a cup of tea, open a Tunnock’s, and write a recipe.

My quick go-to is to cook some onions, add a jar of BOLD BEAN CO CHICKPEAS, along with Parmesan, olive oil and loads of black pepper. It sort of amalgamates like a cacio e pepe. It’s the ultimate fiveminute comfort food.

I use CAVOLO NERO or any seasonal greens to make a classic sauce for the week with herbs, garlic, Parmesan, oil and lemon. You can toss it through pasta, add it to a broth or dollop it next to fish.
