Spanish orange chicken

Skin-on chicken is an excellent source of collagen. Paired with vitamin C-rich oranges and olives for healthy fats, this is a winning one-pot for radiant skin.

YOU WILL NEED

1tbsp olive oil 8 skin-on, bone-in chicken thighs and/or legs 2 large onions, sliced 2 garlic cloves, roughly chopped 200ml sweet sherry 2 whole oranges, peeled and sliced into thick rounds, plus juice of 2 Small bunch lemon/regular thyme 100g pitted green olives

1 Heat the oil in an ovenproof casserole dish. Season the chicken and fry over medium-high heat until golden all over. Set aside.

2 In the same pan, fry the onions for 5-10 mins, stirring regularly until softened and beginning to caramelise, then add the garlic and cook for another 2 mins. Pour in the sherry and orange juice, then simmer for 5 mins.

3 Heat the oven to 180C Fan/Gas 6. Return the chicken to the pan, skin side up, along with the thyme. Transfer to the oven and cook for 25 mins.

Baste the chicken in the pan juices and scatter over the orange slices and olives, then return to the oven for another 20 mins. Serve with the feta and walnut salad or roasted veg.

Feta and walnut salad

Walnuts are rich in collagen-building copper and skin-loving omega 3s, while radishes, pomegranates and red onion are high in vitamin C. Plus, feta is a source of bone-friendly calcium.

YOU WILL NEED

1 large flatbreads 1 large red onions, finely sliced 3tbsp extra virgin olive oil Juice of 1 lemon 10 radishes, finely sliced 75g feta 50g walnuts, toasted and chopped 75g pomegranate seeds (optional)

1 Heat the oven to 200C Fan/ Gas 7. Bake the flatbread for 10 minutes until crisp, then break into bitesize pieces into a bowl. Add the onion, olive oil, lemon juice and radishes. Season, then mix well.
