Pizza omelette

SERVES 3-4

Fast and thrifty eggs get an upgrade with this takeaway-inspired omelette – perfect for lunch or dinner.

YOU WILL NEED

8 medium eggs
1tsp dried Italian herbs, or dried
oregano, plus extra to sprinkle
30g finely grated Parmesan cheese
or mature Cheddar cheese
1tbsp olive oil
4tbsp tomato passata or pizza sauce
90g sliced pepperoni
Handful pitted olives, chopped
125g ball mozzarella, roughly torn
Handful basil and/or oregano leaves,
to garnish (optional)
Leafy salad and crusty bread, to serve
(optional)
You will need: 23cm ovenproof frying pan

HOW TO DO IT

1 Heat the grill to high. In a large bowl, beat the eggs, dried herbs, parmesan and a pinch of salt and pepper. Heat the oil in the frying pan over low-medium heat and add the egg mixture.

2 Cook the eggs, stirring for 3-4 mins, until almost set, then add the passata in dollops, along with the pepperoni, olives and mozzarella. Cook under the grill for 4-5 mins until golden and bubbling.

3 Serve the omelette in wedges, garnished with an extra sprinkling of dried and/or fresh herbs, if liked, with a leafy salad and crusty bread on the side.

TIP USE A GARLIC FLAVOURED PASSATA FOR EXTRA OOMPH, AND SWAP PEPPERONI FOR ANY DELI BITS.

Speedy pork fried rice

So easy, and really delish – add as much chilli as you dare!

YOU WILL NEED

2tbsp sesame oil
3tbsp soy sauce
4 garlic cloves, crushed
1tbsp sesame seeds, plus extra to serve
½tsp chilli flakes
1tsp chilli paste
2tbsp vegetable oil
350g pork tenderloin fillet, finely sliced
200g baby corn, sliced lengthways
1 red pepper, seeds removed and
roughly chopped
1 bunch spring onions, roughly chopped,
plus extra to serve
2x250g pouches cooked long grain
white or brown rice

HOW TO DO IT

1 In a bowl mix sesame oil, soy, garlic, sesame seeds, chilli flakes and paste.

2 Heat a large wok over high heat, add 1tbsp vegetable oil. Once hot add the pork and reduce the heat to medium. Stir fry for 5 mins, until the meat is starting to brown. Tip onto a place and set aside.

3 Return the wok to a medium-high heat and add the remaining veg oil. Stir fry the vegetables for 3 mins, until beginning to soften and char.

4 Add the chilli sauce mixture and rice to the wok. Return the pork to the pan and stir fry for 2 mins, then serve with extra sesame, spr
