Baked salmon with Gruyère &mustard sauce
Serves: 4 Takes: 25min BB 4 x 150g skinless salmon fillet

□ 50g panko breadcrumbs
□ 2tbsp olive oil
□ 50g butter
□ 1 onion, finely chopped
□ 1 celery stalk, finely chopped
□ 2 garlic cloves, crushed
□ 2tsp fennel seeds
□ ½tsp dried chilli flakes
□ 40g plain flour
□ 750ml semi-skimmed milk
□ 75g Gruyère, grated
□ 1tbsp Dijon mustard
□ 200g kale, roughly torn
1 Preheat the oven to 180°C (fan 160°C, gas 4). Line a baking tray with baking paper. Arrange the salmon fillets on the tray. Sprinkle over the breadcrumbs and drizzle over half the oil. Bake for 10-15min.
2 Meanwhile, melt the butter in a large pan over a medium heat. Add the onion and celery and cook for 3-4min, stirring occasionally. Add the garlic, fennel seeds and chilli flakes and cook for 30sec, then stir in the flour and cook, stirring, for 1min. Gradually whisk in the milk until smooth. Slowly bring to the boil, stirring, then reduce the heat and simmer for 3min until thickened. Stir in the cheese and mustard and simmer for a further few secs.
3 Heat the remaining oil in a non-stick frying pan over a high heat and stir-fry the kale for 1-2min until just tender. Serve the salmon with the sauce and kale, and with optional lemon wedges.
PASTA WITH BROCCOLI & WALNUTS
Serves: 4 Takes: 15min BB 275g fusilli or other pasta shape
