CHICKEN WITH CAPERS & PINE NUTS

1 SMOKY PAPRIKA STEAK SANDWICHES

■ In a large bowl, marinate thin-cut beef steaks for 20 mins in 1/2 tsp each smoked paprika and crushed fennel seeds and a good drizzle of olive oil. Barbecue over a really hot heat for 1 min each side. Serve in toasted ciabatta rolls with some rocket and garlic mayo.

2 PANCETTA & THYME MUSHROOMS

■ Mix some olive oil with chopped thyme and a crushed garlic clove. Brush all over large flat field mushrooms, season, then wrap each in a couple of slices of pancetta. Barbecue until the mushrooms are juicy and the pancetta is crisp.

3 GREEK HALLOUMI PITTAS

■ Barbecue thick slices of halloumi until golden. Put on a serving platter and drizzle over a dressing made from chopped red chilli, finely chopped shallot, lemon juice, olive oil and chopped green olives. Serve with warm pittas and hummus.

4 LAMB KOFTE

■ Mix 500g pack minced lamb with 1 grated red onion, 1 crushed garlic clove, a pinch of chilli flakes, 2 ground cloves, 1/2 tsp ground cumin and some chopped parsley. Season well, then squash into sausage shapes and push them onto skewers. Brush with oil and barbecue, turning regularly for about 10 mins until cooked through. Serve with flatbreads and yogurt.

5 BARBECUE-BAKED PEPPERS WITH FETA

■ Cut the tops off 4 romano red peppers and remove the seeds and membrane. Rub all over with olive oil. Mix 1 pack ready-cooked basmati rice with diced feta, chopped mint, chopped spring onion, halved cherry tomatoes and 1/2 tsp each ground coriander and cinnamon, and season. Spoon into the peppers, then wrap tightly in foil and barbecue over a gentle heat for 15-20 mins until softened.

6 GRILLED CORN WITH HARISSA BUTTER

■ Mix softened butter with harissa paste and chopped parsley. Wrap foil, roll into a sausage shape and chill. Rub sweetcorn cobs with olive oil and season. Grill for 10-15 mins, turning until tender. Serve warm, topped with slices of the harissa butter.
