Ham and Cheese Puffs

Made In Sandwich Toaster

◆ 250g puff pastry

◆ 4 tbsp tomato chutney plus extra to serve

◆ 50g sliced ham, chopped

◆ 2 spring onions, trimmed and chopped

◆ 2 tbsp canned sweetcorn

◆ 40g mature Cheddar cheese, grated

1 Measure the cooking plates of your sandwich toaster. Roll out half the pastry thinly, slightly larger than the dimensions of the two toaster plates. Lay the pastry over the plates and press gently to fit.

2 Spoon chutney in the centre of each compartment and top with the remaining ingredients, keeping the edges clear. Brush the pastry edge with water.

3 Roll out the remaining pastry to fit over the top, press down gently then close and seal the lid. Switch the toaster on and cook for about 10 minutes until golden and crisp. Stand for 5 minutes before removing from the toaster. Serve warm with more chutney.

◆ 75g cooked sausage, sliced

◆ 25g lean cooked bacon, chopped

◆ 6 cherry tomatoes, halved plus extra to serve

◆ 2 large eggs, beaten

◆ Buttered toast to serve

1 Arrange sausage, bacon and tomatoes evenly between each compartment of the sandwich toaster.

2 Carefully pour over the egg. Close and seal the lid. Switch the toaster on and cook for 4-5 minutes until set and lightly golden. Best served warm with extra tomatoes and freshly buttered toast.

Ingredients (Serves 6)

◆ 115g dairy or plant butter, softened

◆ 1 tbsp golden syrup

◆ 415g can fruit cocktail in juice, drained

◆ 100g caster sugar

◆ 2 medium eggs

◆ 1 tsp vanilla extract

◆ 100g self-raising flour

◆ 15g desiccated coconut plus extra to sprinkle

1 Grease and line the bottom of a deep 18cm diameter base nonstick frying pan. Dot with 15g butter and drizzle over the syrup. Arrange the fruit on top.

2 Put the remaining ingredients in a bowl and mix with a wooden spoon until blended. Spread over the fruit to cover it completely.
