Why spend time (and money) queuing at a fast-food joint for breakfast when you can make these impressive homemade versions instead?

• 450g (about 8) sausages

• 1 tbsp oil

• 6 large eggs

• 50g spring onions, thinly sliced

• 4 English muffins, halved and toasted

• 4 cheese slices

• 1 tbsp mayonnaise (optional)

1 Squeeze the sausage meat out of the casings and form it into four equal-sized balls. Flatten and shape the balls into burger shapes and set to one side. 2 Heat the oil in a large non-stick frying pan over a high heat, then fry the sausage patties for 3-5 minutes on each side until nicely browned and cooked through. Set aside and keep warm.

3 In a large mixing bowl, whisk the eggs with the spring onions and seasoning. Add 4 non-stick egg rings to the frying pan, set over a medium heat and carefully pour the egg mix into the rings.
