A cut above

Veal used to be a four-letter word because of the cruelty with which the animals were treated in the past. Now strict welfare rules are in place, and British rose veal, which comes from the calves of dairy cows, is one of the most sustainable meats you can buy. Coombe Farm’s calves are reared outside for around 10 months of the year and they eat grass as well as milk, which turns the meat pink – hence ‘rose’.
